Blackbean Burgers

What?!  I've lost 5 pounds!  I've been trying really hard to eat whole food, not junk, boxed, processed crap.  I haven't been eating meat or dairy either.  Losing weight is great, especially for me, but I really just want to feel better and not so sluggish.  I have been far from perfect but trying my hardest.  New recipes, new meals, new food!  I'm excited!  My family, not so much. While talking with my four year old tonight, I asked him why he wasn't eating his dinner.  His response, "You haven't been cooking good recipes anymore."  Ouch.  I guess he's on to the squash puree and almond milk in his mac and cheese.  Despite this, I'm keeping it up!  I'm hoping that he jumps on with us or at least thanks me in the future.
On the menu tonight:  (super easy and my meat eating dad even liked them!)
Blackbean Burgers 
  •  can of black beans, drained and rinsed
  • 1/2 cup of rolled oats
  • 2 T. water
  • 1/4 cup diced onion
  • 1 garlic clove minced
  • 1 T. Worcestershire sauce
  • 1/2 T. cumin
  • pinch of red pepper flakes, to taste
Mix the oatmeal and water in a bowl.  In a separate bowl, mash the black beans with a fork.  Once the beans are mashed add the oatmeal mixture and the rest of the ingredients to the beans.  Mix well.  Divide the mixture into four equal parts and shape each into a patty.  Put these on a plate and refrigerate for at least 30 minutes.
I really like to grill these on a indoor grill but you probably could also saute them in a pan.
Yum.  I also made a double batch and froze a few patties for a quick lunch.

I am giving it a go!

So I'm trying to get my whole family to eat healthier.  Usually this ends in tears, seriously.  My kids are crying because they are hungry and not at all happy with what is on their plates.  My husband is graciously forcing his healthy meal in his mouth.  I know he is thinking when dinners over, he's gonna grab some ice cream for dessert.  I just need to tell someone about it all.
Truly, I guess it isn't fair to them.  I did change the rules of dinner recently.  The boys love their chicken nuggets, hot dogs, and macaroni and cheese.  Then when mommy starts putting broccoli and garbanzo beans on their plates, it's bound to cause some distress.
Never the less, I'm moving forward.  I'm not sure where we're going but it's got to be healthier than where we are at!
